Frequently, I make eggs for dinner as a simple go-to meal. We like to pair the eggs with either vegetables or sausage. I love the flavors of pork, turkey and chicken sausages. What I don’t like is the amount of sodium per serving of most store-bought sausages.
My solution was to create a sausage recipe using a few spices, apple and ground burger. Creating this recipe takes me back to my youth when I helped my parents and grandparents make homemade sausage on butchering days. Making sausage using an antique sausage press was one of my favorite parts of butchering.
An added benefit of the recipe is that it is so easy to make that you can double the recipe to freeze for later.
One of my favorite sausage flavors is apple. I decided to use ground chicken with this recipe because I prefer the taste. You could just as easily substitute ground turkey in this recipe. The combination of the finely diced apple, sage and a hint of nutmeg makes these Apple Chicken Sausage Patties delectable!

Ingredients
1 1/2 pounds ground chicken
4 Tablespoons panko breadcrumbs
1 teaspoon crushed sage
1/2 teaspoon pepper
1/4 teaspoon sweet paprika
a pinch of nutmeg (no more than 1/8 teaspoon)
1 apple, finely diced
Instructions
Wash and finely dice the apple.
Combine ground turkey, all the spices, and diced apple in a bowl. Mix well to incorporate all the spices.
Form 8 sausage patties from the mixture.
Bake on parchment paper at 400 for 15 minutes and then flip the sausages to the other side and bake 15 minutes more until finished.
